Southern Potato Salad

(or as my best friend calls it: the one for those who dislike German Tater Salad! I like mine to be the perfect balance of salty and sour. You, however, may want to cut down the amounts of vinegar,  pepper and mustard for your tastes!)

10 to 12 taters, depending on size, cubed
1 whole white onion, chopped
bacon grease
1 Tablespoon yellow mustard
dollop of Miracle Whip salad dressing
white vinegar
1 teaspoon black pepper
1 teaspoon salt

Cook about 4 pieces of bacon, but just keep the grease for this recipe. 
Boil the spuds in salted water until they are fork tender, drain.
Mash, then add onions, mustard, bacon grease, Miracle Whip, pepper, salt and a big pouring of vinegar.
Mix throughly. 

I sometimes add even more vinegar and mustard, but that's entirely up to you!
