an assortment of fruit

2 T butter
2 eggs
1/2 c milk
1/2 c flour
1/4 t salt

Heat oven to 400F. Melt butter in the oven in a cast iron skillet, or handle-less frying pan. Beat eggs in a medium bowl. Add remaining ingredients and mix well. Remove pan of melted butter from oven. Swirl pan to coat bottom and sides. Add batter and bake until puffed and brown, 15-20 minutes. For best results, do not open oven during baking.
