Mexican Cheese Casserole

10-slices American cheese - cut or torn in small pieces
4-ounces sharp cheddar cheese - grated
8-ounces medium cheddar cheese - grated
9-eggs
1-five ounce can evaporated milk
5-ounces water
1/2 teaspoon cumin
salt and pepper to taste
1-small can chopped chili peppers (not hot)

The night before:
1. Spray a 9 X 13 in baking dish with cooking spray.
2. Add the cheese in layers.
3. Cover with plastic wrap and keep in fridge overnight.
(It doesn't have to be refrigerated overnight, but since we have this Christmas morning, it saves time.)
4. Preheat oven to 325 degrees.
5. Mix eggs, milk, water, cumin, salt, pepper until it has the consistency of eggs that are going to be scrambled.
6. Pour egg mixture over cheese.
7. Sprinkle chopped chilies on top.
8. Bake for one hour.
9. Let set for about 15 minutes before serving.

We like to serve it with salsa. we like the Mexican rotel tomatoes...just put in blender|
 for a few seconds and it makes a nice smooth salsa...easy too. 

Calico Beans

1/2 lb bacon, fried crisp and crumbled
1 lb ground beef, fried and drained
1/2 c chopped sweet onions (cooked for a few minutes along with the
hamburger)

While the above cook, add the following to a crock pot:

2 16-oz cans baked beans (I like Bush's original)
1 16-oz can butter beans
1 16-oz can black beans
1 16-oz can kidney beans
1/2 c brown sugar
1/2 c ketchup
1 T dry mustard

Add in the cooked bacon, ground beef, and onion. Cook for at least 2
hours, stirring occasionally, or bake in the oven for an hour at 350F.

Hash Brown Casserole

2 lb bag frozen hash browns
1/2 c melted butter
2 cups sour cream
1/2 c chopped onion
2 cups old grated cheese
1 cup undiluted cream of chicken soup
1 tsp salt
pepper to taste
Melt butter and pour over hash browns.  
In another bowl mix rest of ingredients.  
Pour this mixture over potatoes and mix well.  Put in a 9x13 pan.
 
Topping:
2 cups crushed cornflakes
1/2 cup melted butter
Mix together and spread over hash brown mixture.  
Bake at 350 degrees for 1 hour or until topping is brown and casserole bubbles.

Chocolate Zucchini Cake

1/2 c oil
1/2 c butter
1-3/4 c sugar
2 eggs
2-1/2 c flour
1 t vanilla
1/2 c milk
1/2 t salt
4 T cocoa
1/2 t baking powder
1/2 t soda
2 c zucchini, grated
Combine ingredients in order given. 

Top with:
1/2 c nuts
1/2 c chocolate chips

Bake at 325F for 45 min in greased & floured 9 x 13 pan.

Mouse's Easy Caramel Apples
 
1) As many caramel squares as you can find.  (find not take)
2) At least one apple sliced.
3) Take a bite of an apple slice.
4) Take a bite of caramel.
5) Chew together.
6) Repeat until caramel or apple is gone.

Spicy Pumpkin Pie

2 eggs, beaten
3/4 c sugar
15 oz can pumpkin
12 oz evaporated milk
 t salt
2-1/4 t cinnamon
1-1/8 t ginger
1-1/8 t cloves

Makes 1 or 2 pies, depending on size of pie pan(s).

Combine filling ingredients in order given; pour into pie crusts. Bake
at 350F for 35-40 minutes or until knife inserted near center comes out
clean.

Herb and Onion Bread

1 c lukewarm water
1/4 c finely chopped onion
2 T butter
2 T dry milk powder
2 T sugar
2 t dill weed
2 t poppy seed
1 t salt
3 c bread flour
1-1/2 t yeast

Combine in the order recommended by your bread machine.
